
The tastiest Mediterranean inspired meal comes together in no time at all with this healthy easy falafel salad bowl. Falafel are truly one of my favorite instant healthy meal. It is so easy to prep the patties ahead of time and just air fry then when ready to eat. You can make various dishes using similar ingredients with minimal changes. You can make wrap, bowl or salad. Using the main ingredient falafel, you can customize with choice of veggies and sauces.
Generally we serve falafel on pita bread with tons of toppings and sauces but lately I have been craving salads. I love a good salad with tons of fiber and protein. I like to serve my falafel salad with tons of cucumbers, tomato, onions, tomatoes and green chilies. I love serving my falafel salad with homemade yogurt dressing, which was complete experiment, however its addictively delicious. If you are not fan of yogurt dressings then you can absolutely serve these with store brought hummus or tzatziki. However, you HAVE to taste it at least once, because my yogurt dressing is SO DAMN GOOD!
This salad is savory, crunchy, satisfying and flavorful. I know falafel seems intimidating to make, but it is actually very simple. I recommend making batch of Falafel and freezing them to use as needed. You can bake or air fry them in jiffy when you are ready to eat them. Pile the bowl up with healthy veggies and there you have your meal ready under 15 minutes. I hope you love this salad & dressing as much as I do!

Ingredients
For salad
8-10 falafels
1 medium size cucumber, chopped
1 large tomato, chopped
1/2 cup onion, chopped
1/3 cup cilantro, chopped
1/3 cup feta cheese (optional)
For Dressing
1/3 cup plain yogurt (homemade)
1/3 cup sour cream
1 tbsp garlic, finely chopped
1 tbsp lemon juice
salt & pepper to taste
Method
Chop all the veggies and place them into a large bowl. Air fry your falafels or deep fry, add them to your veggie bowl. Gather all the dressing ingredients in blender and blend until smooth. Drizzle the dressing on top and toss until all combined well. Serve it right away!
P.S. You can add extra choice of veggies and sauces or dressings, however I hope you give a go at least once because I make delicious yogurt dressing!
