
Sometimes the simplest ideas are the best. When it comes to summer recipes and summer entertaining, it is time to simplify and enjoy the fresh healthy foods in all their glory. If you need last minute dessert for your party, I highly recommend strawberry cheesecake bites because they are really quick to whip up and great healthy dessert or snack. The flavors work so well together, it almost feels unfair how delicious they are when they take such little work to make. These are perfect gift kids can make for their mothers on mothers day. You can serve them with blueberries to make Red, White, and Blue theme for July 4th or other patriotic holiday parties. Now lets get to the recipe!
Ingredients
1 lb large strawberries
1 8oz package cream cheese, softened
1 cup powdered sugar
1 tsp vanilla extract
1/4 cup graham cracker crumbs or blueberries (optional)

Method
Rinse strawberries and remove the stems from the strawberries, then use a melon baller to scoop out a hole in the top of each strawberry. Cut a small part of the bottom strawberry with a sharp knife to create a flat surface for them to stand on. Using a hand mixture, mix together the cream cheese, powdered sugar, vanilla extract until fluffy and light. Transfer the cream cheese mixture to a pipping bag lined with a star tip, and pipe the filling into each of the prepared strawberries. Top each cream cheese pile with a blueberry or with graham cracker crumbs, if desired. Serve and enjoy!
