
For all my coffee lovers out there, have this homemade Horchata iced coffee! For those of you who have never tasted Horchata, it is a Mexican drink made from rice, almonds, cinnamon and sugar. This drink is absolutely delicious, simple to make and is the perfect afternoon recharge. It is dairy free, soy free, vegan, vegetarian, and gluten free. It may sound odd, but if you have ever had a true Horchata, you know just how good it can be. It is creamy, sweet, and always perfectly hinted with cinnamon. What are you waiting for? Go grab your blender and keep your afternoons deliciously caffeinated all winter long!
Ingredients
4 cups of water
2 cups of uncooked white rice
1 cup raw almonds
32 oz cold brew coffee concentrate
1 tbsp blue agave nectar or 1-2 tbsp of sugar or stevia
Ice cubes
cinnamon sticks for garnishing

Method
Blend water, rice, and almonds in a blender until well combined. This process will take approximately 2-3 minutes. Mixture will be coarse. Strain mixture through a nut bag, or cheesecloth into a pitcher, discarding solids. Stir in coffee concentrate and agave. Serve horchata over ice and garnish with cinnamon sticks. Enjoy!
