These energy bites are quick and easy to make. They are perfect on the go snack which are versatile and full of healthy ingredients. Most importantly, they are delicious and filling without being overwhelming. These are full of healthy fats, fiber, protein and have no processed sugar. Ingredients
1/2 cup almond butter
10 medjool dates, pitted
1.5 cup of old fashioned rolled oats
1/3 cup of craisins, chopped
1/3 cup of nuts (almonds and walnuts)- add any types of nuts of choice
1/2 tsp ground cinnamon
1 tsp vanilla extract


Method
Add all the ingredients in food processor besides craisins and pulse until batter is smooth. Remove the batter in a bowl and add chopped craisins. Use a cookie scoop to ensure you have similar size balls. Make balls and leave them on a plate uncovered for 30 minutes. When balls are left outside, they firm up and feel dry to touch. Store them in a cookie jar or airtight container. These will stay for a week outside the fridge or up to three weeks in the fridge. Enjoy!
