Stuffed dates

Today’s post is going to be short and sweet just like these little fellas. During this pandemic, everyone is home and not in their usual routine. Spending all day at home with kids can be difficult when it comes to finding healthier snack ideas. These stuffed dates are the easiest dessert/snack you have ever seen. FOR REAL! Less than five ingredients and less than five minutes. Yes, you read that right!

Dates are seriously one of the best fruits to have on hand! They are a tropical fruit from palm trees that are sweet, sticky and delicious! Dates are often seen in savory appetizers like goat chest stuffed dates, which I love! But sometimes you just want a sweet snack with just in hint of savory! This is why I made these candy-inspired stuffed dates! You can stuff them many ways however I will share my three most favorite stuffed toppings with you all!

You may wonder why dates? I chose dates because they are full of antioxidants, fiber and healthy alternative to conventional sweets which are almost any diet friendly! When you are making this recipe, I highly suggest using Medjool dates, because they are larger, softer and have a rich caramel like flavor. Compared to regular dates, Medjool dates are easier to stuff.


Tips on removing pits from dates

  1. Use a small knife to slice the date lengthwise down the middle.
  2. Use your fingers to open up the date (but don’t pull the halves apart).
  3. Remove the pit. Easy!

Filling ideas for stuffing dates

Nut butter Herbs (mint/basil)
Nutella Sun dried tomatoes

Now let’s get to the recipe of my favorite three different topping variations.

Ingredients

Medjool dates

Almond butter (you can use any nut butter of choice)

Almonds, pistachios (you can use any nuts of choice)

Nutella

Goat cheese (room temp- it is easier to work with)

Method

Gather all your ingredients. Finely chop almonds, pistachios. You can use store brought almond butter or make your own. Remove pits from the dates.

  1. Stuff your dates with small quantity of Nutella & almond butter. You don’t have to add both at the same time, if you don’t like it. Sprinkle pistachios on top.
  2. Stuff your dates with goat cheese and add chopped almonds on top.

Once you stuff them, they are ready to eat! These are one of the easiest things you have probably ever made in your life! If you are making them for later use, then immediately store them in an airtight container in the fridge.
