
I have never been a big fan of bananas. Sure, I will toss one in a smoothie or ice cream, but that’s about all. Being home all day with 4 year old during spring break its quite eventful! He kept asking me to make something together, as we do on weekly basis. I had stash of chocolate chips and lots of fruits. I wanted to make a sweet treat that is light, refreshing, easy to throw together, and great to make with kids. This was my first time making frozen bananas and let me tell you that they are super easy to make and are the ultimate treat! With the weather heating up, it is perfect to have in your arsenal for hot summer days when everyone’s craving something cold and the popsicle stash is gone! These are healthy, no bake healthy vegan, gluten free treat!
I had no idea just how amazing homemade chocolate dipped frozen bananas are, and I am completely obsessed. I don’t know about you but dipping anything in chocolate always seem to be an inherently messy affair. But because I also can’t seem to resist the temptation, I have discovered an easy way to make them. All you need is two simple ingredients and should not take you more than 10 minutes to make. Grab some bananas, choice of chocolate chips, toothpicks and toppings. You can completely experiment with toppings. I have used pistachios, almonds and coconut. Now let’s get to the recipe!

Ingredients
2 bananas
¾ cup semi- sweet dark chocolate chips
1 tsp coconut oil
Choice of toppings (chopped mixed nuts, shredded coconuts, chocolate chips, etc)
Tooth picks
Parchment paper
Method
First gather all your supplies. Slice bananas and set aside with toothpick on them. In separate bowls, have your choice of toppings ready.
After prepping all the ingredients, melt the chocolate using double boiler method. Add 3-inch water to a small saucepan and bring to simmer. Place heatproof glass bowl on top of the pot, making sure the bottom of the bowl is not touching the simmering water. Add your chocolate chips with a bit of coconut oil and stir gently until chocolate is smooth and melted.
Dip bananas in melted chocolate until covered entirely. I sprinkled my chocolate covered bananas with finely chopped cashews & almonds. You can sprinkle choice of toppings and then place all of them on parchment paper in the freezer to chill. This process takes approximately 1 hour. I don’t like them completely frozen, I highly recommend thawing them 10 minutes before eating for optimal taste!
Notes – You can store them in freezer in zip lock up for 1 week.
