Have you ever taken a classic recipe and thought, “What if I gave this a little twist of my own?” Well, that’s exactly what happened in my kitchen!
Some days call for elaborate meals, and other days, all you need is a big bowl of comforting pasta that makes everyone at the table happy. Today, I’m bringing you one of my favorite kinds of recipes – simple, flavorful, and with a little surprise!
Aglio e Olio, which means garlic and oil in Italian, is a beautiful example of how a handful of humble ingredients can create something extraordinary. Traditionally made with spaghetti, olive oil, garlic, and red chili flakes, this Italian classic gets a fun little makeover in my kitchen with freshly shredded paneer.
And let me tell you, the combination is delicious! The aromatic garlic, gentle heat from the chili flakes, fresh greens, delicate cheese, and soft shreds of paneer come together to create a dish that’s comforting without being heavy.
What I love most about this recipe is its simplicity. No complicated sauces, no hard-to-find ingredients, and no hours spent in the kitchen. Just fresh ingredients, a little love, and a whole lot of flavor!
Whether you’re cooking for your family, planning a cozy weekend meal, or simply craving something different, this pasta is worth adding to your menu.
A little question before we get cooking!
Are you someone who sticks to traditional recipes, or do you love experimenting and giving classic dishes your own twist?
I’m always curious to know what happens in your kitchen! Tell me in the comments – would you try paneer in your Aglio e Olio?
Now grab your favorite pasta bowl, get that garlic sizzling, and let’s make something delicious!

Must-Haves
- Pasta: Thin noodles are traditional and absorb the sauce well, but you can really use anything you like or have on hand.
- Extra virgin olive oil: Be sure to use high-quality extra virgin olive oil, as this is one of the main ingredients.
- Garlic: The more the merrier in this recipe! Make sure to get fresh garlic!
- Salt: Season to taste
- Cilantro: Adds great flavor to the pasta.
- Red pepper Flakes – Use as much or as little as you like.
- Lime Juice: A squeeze of fresh lime juice is pretty typical to cut through the oil and balance out the dish.
- Parmesan: Optional
- Paneer: Fresh and Shredded, just add good amount of protein to the pasta, this is my sons favorite!
Ingredients
- 450 g/1 pound pasta (Angelhair or Spaghetti are recommended)
- Salt to taste
- 6 tablespoons extra-virgin olive oil
- 10-12 large cloves garlic , finely chopped/sliced
- 2 teaspoons freshly squeezed lemon juice
- 1-2 teaspoons freshy grounded black pepper
- Grated zest from ½ small lemon (optional)
- ½- 1 cup minced fresh cilantro
- ½ – 1 cup grated Parmesan cheese
- ½ – 1 cup grated Paneer shredded
Instructions
- To make the pasta: In a large pot, bring 4 quarts/liters of water to a boil. Add 1 tablespoon salt, followed by the pasta. Cook until al dente (i.e., slightly firm to the bite, not crunchy nor soft). Reserve 1 cup of pasta cooking water, and drain the pasta.
- Grab a large skillet and pour in that lovely olive oil. Heat it up over medium heat – you want it warm but not smoking hot. Now, gently add your sliced garlic and those peppy red pepper flakes. Stir them around and watch as the garlic turns a beautiful golden brown.Once your pasta is perfectly cooked, drain it but save about half a cup of that pasta water – it’s liquid gold!
- Now, turn down the heat on your skillet to medium-low and add the drained pasta right in there. Throw in the chopped parsley too for that fresh, herby kick along with shredded paneer. To give that extra kick of spice, add 1 teaspoon freshly grounded black pepper powder. Give everything a good toss. If it looks a bit dry, splash in some of that pasta water to bring it all together. Almost done!
- It’s time to make this dish sing. Squeeze some fresh lime juice over the pasta and sprinkle a generous amount of parmesan cheese!

Storage
This dish is best served fresh, as the oil tends to separate from the pasta after being refrigerated. It’s still just as delicious, however you may need to take an extra step in re-heating if the oil bothers you.
Your leftovers will last 3-5 days in the fridge. To reheat, you can simply microwave it. To reduce the amount of separated oil in your bowl, reheat your leftovers in a skillet over medium-heat with a splash of water. Continually toss the pasta well as it heats up to re-create the sauce.
