Vegetarian Quesadillas

If you are looking for a quick easy dinner idea which can be ready in 30 minutes? I highly recommend these vegetarian quesadillas! These veggie quesadillas are packed full of goodness including black beans, veggies which are filling and good for you. Making them is as simple as sautéing all the ingredients in a pan at the same time for just a few minutes, then sandwiching them between two flour tortillas. These are highly versatile, you can customize your stuffing and cheese. They are so delicious that you will want to make them ASAP! Why? Ingredients

1 tbsp olive oil

1 cup chopped bell pepper ( pick any colors you like)

1/2 cup chopped jalapeno (optional)

1 cup chopped zucchini

1 cup chopped yellow squash

1 cup sliced mushrooms

1/2 cup canned black beans (drain & rainsed)

1/2 cup chopped tomato

3/4 cup chopped red onion

2 tsp Mexican seasoning

salt to taste

6 (8 inch) tortillas (white or wheat)

2 1/2 cup shredded cheese (cheddar or 5 cheese mixture)

1 butter stick to use while roasting quesadilla

Serve with – salsa, guac, sour cream

Method

Heat oil in large pan over medium high heat. Add onion, tomato, jalapeno, bell pepper, zucchini, squash, mushrooms, rinsed black beans, Mexican seasoning, and salt. Cook, stirring occasionally, just until tender, about 10 minutes. Remove from pan. Coat pan with little butter. Lay a tortilla in pan and sprinkle with choice of cheese. Spread roasted veggie mixture on top and sprinkle with cheese on top. Top it off with another tortilla; cook until golden on both sides, 2to 3 minutes per side. Cut each quesadilla into 6 wedges, serve with sour cream, guac or salsa.
