
Winter break is way too long! If you have toddler at home, then you know what I mean! Since past couple of months, I have been trying to get my son to eat new foods on weekly basis to expand his palate. Because if he was given a choice my son would live off roti, dal-rice and khichdi along with pizza, pasta,and almond-butter jelly sandwich. After many attempts, he finally fell in love with avocados and spinach. Lately my son has been asking to eat avocados and is really into green colored foods. Since he was two, he has these small phases where he gets into colored foods and this week he wants everything green!
If there’s ever a recipe I am going to beg you to try, it’s this one. This avocado pasta is out of this world! You won’t really know what to expect or how delicious it is until you try it! It is like nothing else I have ever had before but tastes tad similar to pesto. The smooth creamy avocado along with the tangy garlic and fresh herbs make an amazing combination and its quite healthy too! This recipe is truly magical! Tangy, creamy pasta that will impress just about anyone and will make you look like a pro chef! This recipe is vegetarian and can be gluten free, if you use gluten free pasta. I would call this one of my “go to” meals when we are rushed, but still want something delicious homemade. If you are one of those people who get bored with lunch options, then definitely give this dish a go! This pasta dish is amazing, flavorful and quite filling.

Ingredients
2 cups of uncooked pasta
1 ripe avocado
¼ cup EVOO
¼ cup grated parmesan
¼ cup fresh basil
¼ cup fresh cilantro
4-6 cloves of garlic
2 tbsp lime juice
Salt and pepper to taste
Method
Bring water to boil in a medium sized pot. Salt the water and add in your pasta. Cook until Al Dente, approx. 8-10 minutes. Drain well and set it aside. Halve avocado, remove seed and peel it.
In a blender, add avocado, EVOO, cheese, garlic, basil, cilantro and lime juice. Blend well until smooth and creamy.In a large bowl, add your pasta and toss it in the avocado creamy sauce. Season with salt and pepper to taste and top it off with parmesan cheese, as desired. Enjoy!
Tip – This pasta dish is best eaten the day it is made!
