
I am fairly confident in the kitchen and pretty sure my cooked food is enjoyed and loved by many. The funny thing is, though – especially because I am a food blogger, I will often worry when someone else is actually making my recipes. When I am talking to someone and they say “I am making your … for dinner last night, I get super anxious and immediately hold my breath waiting to hear their response. And did you all know I’m working on my own cookbook? Well, don’t even get me started on the anxiety that comes with that! It is a lot of work and taking so much time on every aspect. However, the thought of a published book with my name on it holding all my recipes is a huge motivation for me to keep going.
We all love pizza! I have been on a hunt and experimented so many recipes to get the perfect dough recipe. Trust me, this has been a long process. Most of the dough recipes require you to plan ahead to get the best rise and the perfect texture. I am not very good planner and in my household most plans are made last minute. I never plan ahead for the week, if we feel like eating something, I just whip it up the same day or the around meal time.

After experimenting different dough techniques, I have realize that most people fail making good pizza dough because they add too much flour. The trick is you want to leave the dough loose and sticky, because once it rises it changes its consistency and turns into the perfect pizza dough! Another important key is to bake your pizza using a pizza stone. They are inexpensive and make a huge difference in making your own pizza.
When we are traveling and do not have time to make the dough from scratch, I sometimes use the frozen cheese pizza from Costco. Just apply the spicy paste, black beans, cheese, and jalapeños. Bake it for 10-12 minutes per the instructions. Once done, add chopped avocados and drizzle it with sour cream. Within 15 minutes, you have a quick meal right there. However, I do recommend trying my crust recipe. Once you try it, I don’t think you will ever be eating frozen pizza again! Hope you enjoy this as much as we do. If you cannot handle the spice, adjust or skip the chilies and jalapeños. I suggest you to get creative with your toppings and share your pics with me when you make it!

Ingredients
for the pizza dough:
1 1/4 cups of warm water
1.5 tbsp instant yeast (make sure to use fresh every time)
2 tbsp of sugar
3 cups of all purpose flour
1 tsp of salt
2 tbsp of canola oil
for black bean pizza:
1 roma tomato
1 medium size onion
2-3 jalapenos
4-5 cloves of garlic
2-3 tbsp pizza sauce
2-3 tbsp of mozarella cheese
2-3 tbsp of cheddar cheese
1 cup of black beans
1-2 tbsp of jalapenos
sour cream drizzle (add last)
2-3 tbsp avocado chopped (add last)
Method
To make pizza dough:
In a kitchen aid mixer bowl, add water, sugar and yeast. You have to allow 3-4 minutes or until the mixture is frothy. Once the yeast is frothy, it means it is activated to use. Add your oil and salt to the frothy mixture. Mixing well slowly add 1/4 cup of flour at a time. Even after adding all the flour, your dough will be sticky but don’t you dare add more flour! It is normal for the flour to stick to your fingers. Trust me, you want this stickiness to get the perfect texture.

Scrape out the sticky dough in the deep greased pan. Grease your hands in oil and coat it well. I cover the bowl with plastic wrap and let the dough rise for 45min to 1 hour. After the dough rises, pull the dough out on the counter. Cut the dough into 2 portions. You will be able to make 2 pizzas out of this recipe. Stretch out the dough and form a smooth ball. Put it in ziplock bag and refrigerate until needed. However, you do want to use it within 24 hours.

Make the black bean pizza:
Add onion, tomato, garlic, green chilies in chopper and chop very fine. Keep this spicy paste aside for later use. Take out black beans from the can and wash them in cold water. Keep them aside for later use. Chop avocado and keep aside to use later as a topping.
Pre heat oven to 450-475 F for 30 minutes with stone in the oven. Roll out the dough to thickness desired. Spread 1-2 tbsp of pizza sauce along with fresh chopped spicy paste. Add mozzarella/cheddar cheese mixture, black beans, jalapeños. Bake for 10-12 minutes or until the crust is golden. Remove baked pizza, add chopped avocado and drizzle sour cream over the pizza. Cut pizza in slices and serve hot!

Frozen pizza:
If you don’t have the time to make the dough from scratch at home, you are more than welcome to use pre-made frozen pizza. If you are using frozen pizza then steps are slightly different. On top of the frozen pizza, add freshly chopped spicy paste, black beans, cheddar cheese(skip mozzarella since it already comes with it), jalapeños. Follow the pizza directions for baking. Remove baked pizza, add chopped avocado and drizzle sour cream over the pizza. Cut pizza in slices and serve hot!
